Stuffed chicken breasts

Using skinless boneless chicken breasts, chef Joe Dias creates this fabulous meal that is healthy and delicious too. The chicken breasts are stuffed with prosciutto and creamy Fontina cheese, seared and then baked in the oven.

The stuffed chicken breasts are served with a tomato, mozzarella and basil salad, along with a side dish of brussel sprouts with honey and walnuts.  This entire meal is only 850 calories per plate and serves four people for just $5.50 per person. A nutritionist joins Joe and breaks down how you can make the meal even more healthy.
